Carbonade Flamade

Carbonade Flamade
Beef stewed in beer
Serves 4
4 Shallots (or 2 onions)
1.5 stick of butter
2 lb 2 lb beef cubed
salt
pepper
good pinch good pinch of ground Coriander
2 sprigs of thyme
1-2 bottles  Liefman's Goudenband
2 tbsp flour
1 tbsp Dijon Mustard (optional)
Chop shallots and fry them in butter 
Season beef with salt, pepper, and coriander
brown beef
Cover beef with beer
simmer for 1.5 hours
remove meat
run the sauce through a sieve and return to pan
add flour to sauce and mix
add dijon
cook flour (about 2 minutes)
Return meat to sauce and heat through
Serve with streamed or boiled potatoes and sweet corn.

(Can be served over egg noodles or rice as well)
