Pancakes




Ingredients:
2 eggs, separated
½ Tsp. baking soda
1/8 tsp. salt
½ C. flour sifted
1 C. buttermilk



Directions:


Separate egg whites from egg yolks.  

Place egg whites in the bowl they will be whipped in and put into the refrigerator.


Beat egg yolks.  

Add salt and whisk in.


Pour buttermilk into a large bowl.  

Add baking soda to buttermilk and stir.  

Add egg yolks and stir with a whisk.


Then add flour and mix with a whisk.


Remove egg whites from the refrigerator.  

Whip egg whites into soft peaks.


Fold egg whites into flour and milk mixture with a rubber spatula.  

Enjoy


Yield:  10 servings
